Warm weather is a coming, which for me means PIE SEASON! So on 3.14, “Pi” day, we’re kicking it off with this decadent confection from The Savannah Pie Company. Who are all about artisanal creations, made farm to fork and hand-delivered to your door!

Salted Caramel Fleur De Sel Pie

Serves 8 to 10

This pie is the perfect combination of sticky, sweet, and salty— and just downright divine. It begins with a “dry caramel,”which means you start by cooking sugar in a dry pan until it becomes molten. It’s a very simple process; but you’ll need an instant-read or candy thermometer—or a very watchful eye—because the boiling sugar can go from sweet and nutty to bitter and burnt in an instant!   Be sure to cook the sugar in a saucepan with at least a 4-quart capacity.

1 recipe Graham Cracker Crust, baked and cooled (see page 000)

2 ½ cups sugar

1 tablespoon Fleur de Sel, plus more for garnish

1/3 cup dark rum

1 cup (2 sticks) unsalted butter, cut into pieces

3 (14 ounce) sweetened condensed milk

1 cup heavy cream

1 tablespoon confectioners sugar

1 tablespoon dark rum (optional)

1.     Place the sugar in a 4- to 6-quart heavy-bottomed saucepan. Heat dry sugar over medium-high heat, stirring frequently, as it begins to melt (it’s okay if the sugar starts to clump).  Stop stirring once the sugar has melted. Continue cooking until it smells very sweet and almost nutty (but not at all bitter or burnt), is dark, reddish-brown, and reaches 350 degrees on an instant-read or candy thermometer (10-15 minutes).

2.     Slowly and carefully (the caramel will bubble up violently) stir in the rum and 2 teaspoons of the Fleur de Sel. Stir in the butter until completely melted. Carefully ladle out ½ cup of caramel into a heatproof measuring cup and set aside.

3.     Stir the condensed milk into the caramel in the saucepan until it’s completely incorporated and no streaks of brown remain.

4.     Remove pan from the heat and scrape caramel into the baked and cooled piecrust; smooth top of caramel. Wrap pan with plastic wrap and chill until firm and cold (about 4 hours). Pie can be chilled up to one day in advance.

To serve: Whip the cream, confectioners sugar and rum to soft peaks. Sprinkle a few flakes of Fleur de Sel over caramel filling. Pour reserved caramel sauce over the filling and smooth. Tilt and turn the pie plate so the sauce runs unevenly over the filling. If the caramel sauce is too solidified to pour, heat it in microwave in 10-second intervals, stirring in between, until its just pourable but not hot. Mound the whipped cream on top of the caramel sauce—or serve it along side—and serve immediately.

Graham Cracker Crust

2 cups graham cracker crumbs

2 tablespoons sugar

1/2 teaspoon kosher salt

5 tablespoons unsalted butter, melted

Position an oven rack in center position and heat oven to 350 degrees.

Stir together the cookie crumbs, sugar, and salt to combine. Stir in the butter until crumbs are fully moistened. Pour crumb mixture into a 10-inch spring form pan and evenly distribute crumbs over the bottom, gently tapping and pressing with the heal of your hand as you go. Use a flat-bottom cup to firmly tamp down the crumbs.  Bake until crust is dry and firm and just beginning to turn golden brown (about 15 minutes). Cool completely on a wire rack until ready to fill. The crust can be made up to one day ahead, stored at room temperature wrapped tightly in plastic wrap.

Hamptons Magazine Annual Clambake at Montauk Yacht Club

 

 

Hamptons Magazine’s Annual Clambake on Sunday, July 17th, 2011 at the Montauk Yacht Club proved (yet again) that Niche Media consistently throws flawless parties!   The entire event was designed by the visionary Kenny Davis, with East Enders being treated to beats from DJ Chris Bachman as well as crooning by up-and-coming artist Matt White.

 

 

Upon arrival to the white tent overlooking a picture perfect harbor scene, there were sponsor booths galore handing out everything from flip flops (Bonobos) to straw fedora hats (10 Cane Rum) to nautical themed tote bags (BMW).  I can’t imagine that it’s hard to find vendors who want to participate, seeing as the Niche Media empire reaches New York’s most discerning demographic and its readers represent the best of Hamptons’ elite.

 

 

For those who wanted to relax in the shade, there were luxurious canopied daybeds scattered around the pool or even a cool circular Extremis lounge for celebrity guests like Beth OstroskyKatie Lee, Dina Lohanand Star Jones.  Niche royalty were well-represented with emperor Jason Binn and wife Haley (who had just arrived back in NY after attending a wedding the night before), publisher Debra Halpert,and Editor-in-Chief Samantha Yanks.

 

 

Savory clambake fare including stuffed lobster, corn on the cob, roasted potatoes and steamed mussels were provided courtesy of Carlyle On The Green and Montauk Yacht Club.   Miniature cupcakes and classic fruit cobblers from Magnolia Bakery indulged us in a sweet tooth’s happy ending.  Lifestyle booths by Talon Airand Open Skies educated us all in how to live the good life, while well-heeled guests floated around the lawn taking in all the sights and sounds.  TuiLifestyle also created a plush lounge area featuring furnishings by Nova Studios and Dodds & Eder so that everyone could kick back while watching the night play out before their eyes.

 

 

Santa Barbara Collection, Xante, Pisco Porton and Vita Coco were on hand to keep everyone hydrated under the summer sun as guests enjoyed mini golf and a pop-up casino by Mohegan Sun Resort & Casino.  Yours truly started out with $400 in chips and managed to walk away from the table with over $11,000 in winnings!  … Too bad it was just for fun.

 

 

At the end of the night it was difficult to tear ourselves away from the celebration, as a weekend full of revelry came to a close.  The beautiful people retreated back to their Hamptons cottages, or even stumbled to their hotel rooms at Montauk Yacht Club.  The rest of us headed back to the city with visions of grand parties in our heads and dreamed of next weekend’s mischief.

Getting to Know Kenny Davis

“I love that every Hamlet has its own distinct style, reflective of its residents,” says Amagansett-based design extraordinaire Kenny Davis, who has worked with a range of colorful characters including Heidi Klum, Diddy, Ashton Kutcher and Queen Latifah. But while designing interiors and events are what put Davis on the map, gardens are where his true passion lies. His illustrated book Pollinate gave a slightly provocative look at the lush flora of the Hamptons, and many botanical elements can be found in his eponymous lighting and wallpaper collection. Were he to design his own fantasy space, gardens would be high on the wish list. “I’m a farm boy at heart,” says Davis. “Thus, I would love a traditional farmhouse with a wraparound porch in Bridgehampton horse country with fields of wild flowers.” 745-2887; pollinateart.com

What’s one career moment that you’re proud of?
Pollinate, my illustrated book, exclusively photographed throughout the Hamptons.

You’re known for your love of color, but if you had to design a whole room with just one color, which would you pick and why?
White, rather the absence of colour. White is the only colour you need.

What book is on your bedside table right now?
The instruction manual to the remote.

What does no one know about you?
I’m straight!

What are three elements of your idea of a perfect day?
Morning stroll to Amagansett’s farmers market, horseback riding, and bonfire on the beach with friends.

What is on your iPod at the moment?
Michael Ball, Toby Keith + Cher and Queen Latifah, my favorite!

What’s one Hamptons home trend you hope runs its course?
McMansions.

What’s the biggest difference you find in the design style between the different villages. (i.e. Montauk versus East Hampton)?
I love that every Hamlet has its own distinct style reflective of its residents.

What’s one Hamptons architecture style or home accessory you hope lasts forever?
White clapboard and aged cedar shingles, lovely english gardens.
